The site of the town was dwelt since ancient times, as the finds in the local Archeological Museum show, but the first nucleus of the historical centre should go back to the high Middle Age.
In the 13th century San Severo reached a notable importance and its wine is already considered the best in the area; besides rare wheat and very good olive oil are produced. In the 16th century San Severo, royal town, mint its own coin and it becames Diocese seat, but it is in the 18th century that the built-up area acquires a new aspect with the building of palaces, churches and splendid monasteries in late-baroque style that represent together with the wine, the main interest pole for a visit to this prosperous Apulian town.
