The "Zuppetta"

Typical Christmas meal of San Severo.

In an oven saucepan with high border put a layer of: bits of toasted homemade bread, stained and frayed turkey’s breast, thin slices of "caciocavallo" and mozzarella, raped caciocavallo and a pinch of cinnamon powder. Put a second layer with the same ingredients in the same order. Pour boiling turkey soup and put in the oven for few minutes in order to get the consistence of a timbale. Cut it in slices.

The aroma of boletus mushrooms thickens with “caciocavallo”, a kind of cheese obtained by milk of podalico cows ( they graze freely ), on lasagne.

PIZZA WITH FRIED SCRAPS OF PORK FAT

The crisp fried scraps of pork fat are utilized to flavour a typical “Sanseverese” cake.
